What we eat does make a difference. No doubt there. But diet can't solve everything. Other voluntary environmental choices such as exercise, sleep routines, drug/alcohol usage and stress also greatly influence our cardiometabolic health too. However, some things are out of one's control. We have little to no control over our genetics. We also can't control how our parents & grandparents lived, which influences us epigenetically and developmentally to affect various aspect of metabolic physiology.

Diet is important. But dietary changes alone can't solve everything and can't circumvent many diet-independent cardiometabolic risk factors. Also, the field of nutritional genomics is still very young. There is no one diet that is optimal for everyone.
